Easy Palmiers

I found this recipe on Bon Apetit last week for Palmiers, those little heart-shaped French cookies, and wanted to give them a try. What makes this even conceivable is using frozen puff pastry dough - I've made puff pastry dough from scratch before and it's time-consuming, messy and difficult.  But our local Whole Foods has Dufour, a good brand that I often use.

This recipe was really easy to make, and the results are very tasty. The odds on any of them surviving to see Monday are not good.

Ingredients:

  • 1/2 cup sugar
  • 4 tsp. ground cinnamon
  • 1 tbs. ground cardamom
  • 2 tsp. ground allspice
  • 1 tsp. ground cloves
  • 1 14 oz. package frozen puff pastry
  • 4 tbs. melted butter

Preheat the oven to 425, and line two baking sheets with parchment paper.

Mix the sugar & spices together.

Dust the work surface with a bit of flour and lay out the puff pastry sheet. It's probably close to the size you'll want - 14"X 10" - but if not, roll it out. Brush it with melted butter and sprinkle about 1/3 third of the sugar/spice mixture on it evenly, and cut it in half lengthwise.

Fold both sides of each strip to meet in the middle. brush with more butter and sprinkle with sugar & spices.  Then fold each strip in half - you'll have two 14" logs about an inch wide. Refrigerate these for a half hour. Then cut them in 1/4 inch slices and lay them flat on the baking sheets.

Bake for about 8 minutes. Remove from oven, turn each cookie, brush with more butter and sprinkle with more sugar & spices. Return to oven for another 10-12 minutes, until Palmiers are golden brown and sugar is bubbly. Cool on a wire rack. Store whatever you don't eat in an airtight container.

Dick my hat is off to you for even trying to do Puff Pastry from scratch! That is one item I always buy Puff Pastry  Dough is good from Whole Foods:))

Hi Dick -- I don't see a calorie count noted but there's always next year to worry about such things -- you're right this looks pretty easy(even for me) and the end result looks quite tasty.

Lookin good Dick.  I love using frozen puff pastry in fact I am making a terrific version of the green bean cassarole using fresh green beans, carmelized onions, bechemel sauce with a little cheddar in it and puff pastry for the top.  Quinten Kelly did it on the Chew the other day.
