I've told you before that I change every recipe that I try. Pretzel Jello Salad, no exception... I made it into a Christmas tree today.
The original recipe is as follows:

PRETZEL SALAD
BOTTOM LAYER – CRUST:
2 cups broken pretzels
3/4 cup melted butter 1 tbsp. sugar Mix together, pat in bottom of 9x13x2 cake pan.
Bake at 350F 8 min. and cool. MIDDLE LAYER – CREAMY:
8 oz cream cheese (softened)
12 oz tub cool whip 1 cup sugar Mix together until smooth and creamy; spread over cooled pretzel crust.
TOP LAYER - JELLO & FRUIT:
2 pkg. small strawberry Jello
2 cups boiling water 20 oz frozen, sliced strawberries Stir together until Jello is dissolved. The cold strawberries will help to make it set faster.
Refrigerate until it begins to gel but do not allow to solidify. Pour over the creamy layer. Refrigerate until set and serve. |
Instead of making the entire top layer with strawberry jello I used one package of lime and covered it with Cherries after it began to set and the the outside of the Christmas three with black cherry with crushed pineapple.
And I purchased a throw away metal pan shaped like a Christmas tree. You turn it upside down and press into the chilled cream cheese layer and pour the outside first. Then you remove after that has chilled and gently spoon in the "tree" portion. This was just the second time I made this. I think I will stick with strawberry next time since it's a brighter red jello.
But this was tasty today. And since I was still quite full from a big lunch I just ate a serving of this for my dinner. I was thinking of other shapes I could make in the future for this too. I have a heart shaped pan I could use at Valentine's Day. I could think of some of my cookie cutters that would work too. I could use stars for a great one at the 4th of July.
I hope each of you enjoyed your Christmas Day as much as I did. Not only did I get some fabulous gifts, I was surrounded with my family and there was a lot of love all around all day. And yes there were a lot of gifts and as always my daughter unwrapped longer than anyone else while we were taking turns. And of course as I look around my living room I can see not one, but two gifts I forgot to take to my mom's house. Ooops might have to fun over there again tomorrow.
