The weather in California provides opportunities for restaurants of all types to provide outdoor seating and this idea has been increasing mor

e and more. What has changed however is the outdoor experience. Forget about just moving tables and chairs outside on the patio and hiring more wait staff to service the customer that prefers eating outdoors. The whole experience is becoming much more grand.

With the advent of outdoor space heaters, even on cool or cold days and nights, these heaters provide a certain comfort level and now instead of the mobile type of heater, vast improvements in design can provide even coverage of heated air that draws more and more customers to the outside. Even with the air being warmed, the air is fresher outdoors and the outdoor eating experience increases the chance for a changing view. 

The restaurant business not unlike many other types of customer service are changing to make the experience itself as good as the food. Somewhere behind this thinking is Steve Jobs of Apple whose entire business life was about making your computing and communications experience extraordinary. And this model is not lost on real estate either. But that is a discussion for another time. 

So how does a restaurant wanting to serve the public in more open space accomplish that extraordinary experience? The illustration photo above to answer it. Throw out everything you know serving food outdoors and think  about the whole experience. The food will take care of itself so the concentration is about the experience. This is not an easy task. I equate it to wearing a pair of $500 shoes in the rain without any worry that they will get wet. 

In some ways, the entire concept has to defy logic, provide for all weather conditions without making the customer aware of it. The photo below begins to show that tables and chairs alone is not the experience, but comfortable seating applied in different ways begins to show the way of creating atmosphere not associated with commercial eating establishments. Change the total environment creating a unique atmosphere, with attention to temperature, coverage for inclement weather, more relaxed seating for the casual diner, and lighting to create a warm and intimate atmosphere and we are getting closer to defining the outside dining experience coming to a restaurant near you!

I really appreciate when outdoor spaces are made to be as comfortable as the one pictured.  At Lake Tahoe's NorthStar, they have delightful areas surrounding the ice rink, which your photo reminds me of.  They are set up for families and groups, have fire pits, warmers, and delightful ambiance.  A great place to spend some winter time.

Hi Myrl, I can't recall seeing the skating but I am sure I have eaten there. We have many restaurants redesigninng their outdoor spaces to create the outdoor experience. There are a number in the gaslamp area as well. I think dining outside is becoming so much more popular with these newly designed spaces, people actually don't mind waiting for seating there.

William, it only makes sense...if people are trying to extend their living space outdoors at home then restaurants are wise to follow that trend.  I'm sure there is tremendous cost involved but if the experience is worth it, then people will pay.

Hi Mona, I am guessing that the cost is probably recovered because it also increases the total number of seating. If the food is extra good, it would seem a no brainer to add these upgraded areas.

The photo speaks to a very indoorsy - outdoorsy type of dining experience.  Upholstered seating, central type of comfort heat.. love it and California would have the perfect climate for that type of restaurant.

Hi William - I notice that on most of the design tv shows, everyone now wants an "outdoor room" instead of a patio, and I guess restaurants are thinking along the same lines.  That photo does not look like patio seating.  It's an outdoor dining room.

William these are the type of Restaurants I love. It increases the foodie experience, great wine, fantastic food and luxurious seating the quintessential California Living! I do not mind paying extra for it either!

I love dining outdoors but the ambiance can make such a difference, especially if there is no view to enjoy. Here is SoCal there is no lack of places to enjoy. And some are more like private homes in terms of comfort and feel (and so gald there is no smoking!).

But the food still has to be good - no matter how upscale or cool the outdoor space, if the food and service suck, well, it's over IMO.

Many of the usual outdoor dining areas fail to have the ambiance that is demonstrated by your photograph.  For me, the area needs to be very special to attract me to outdoor dining.
