This Quarryville Realtor thought that I should share a recipe with my Blog friends that I've sent to my monthly SOI folks.

Recipe of the Month

Italian Salad

Ingredients:

• 1 box (3 shapes) San Georgio pasta,

• 1 chopped onion,

• 1 chopped green pepper,

• 3 chopped stalks of celery,

• 3 chopped tomatoes, remove seeds,

• 1 can chopped ripe black olives,

• 1 small jar of chopped green olives,

• ¼ lb. chopped hard salami,

• ¼ lb. chopped pepperoni,

• ¼ lb. chopped ham, ¼ lb. chopped Provolone cheese,

• 1 cup salad oil,

• ¾ cup red or white vinegar,

• 1 tbsp. salt,

• ½ tbsp. pepper,

• 1 tbsp. oregano

Cook pasta according to directions on the box. Do not overcook. Chop onion, pepper, celery, tomatoes, black olives, green olives, salami, peperoni, ham and cheese. Stir to mix well. Add to cooked pasta. Mix oil, vinegar, salt, pepper and oregano in a jar; shake well. Add when it is time to be served. Enjoy! It makes a great lunch!
