I did em again....and they were wonderful! First you have to get a good shank....about 7 or 8 ribs. Then put them in a bowl, rub them reallgood all around with some marsala rub...or paprika, cumin, cayanne and salt and pepper. then poor about 2 cups of Ezra Brooks over them. refigerate for a few ours and turn them over before you go to bed, then again in the morning. When you heet the BBQ upto about 4oo, turn the direct flames down to low and keep the others on high. cook them on one side for about 10 minutes, check them and rotate them at least once. Only turn them over once. Then about 10 minutes on the other side...don't over cook them...they need to be like medium rare steak or prime rib medium rare.
This weekend I want to do a corn beef on the BBQ...anybody have any good recipies or tips?
