Okay I have been meaning to do this post for a long time, and it got away from me.  Today I talked story with someone who called on my post about Maui organic beef  (he works at the local community college, the AG department).  So I revisited my post from back in October, and there it was, all set up to link to this post, as planned.  So here is the rest of the story now....

If you've raised yourself a nice steer or pig to eat, and you really don't want to "do it yourself" when it's time for slaughter, what are you going to do?  Here on Maui we take our beef up to:

I really think of this location more as being in Makawao than Haiku - it's closer to Polli's Mexican Restaurant than to downtown Haiku.  It's a little hard to find since it's up at the end of a short road off Kaupakalua Road.  They've been in business for generations, it's a family run company.  Karen is the one who will answer the phone and tell you what day to bring in your animal.  You need to make a reservation about a month ahead, to line up the killing, cutting and wrapping.  The usual procedure is to bring in your animal on Sunday afternoon, for Monday kill.  Pick up the processed meat about 10 days later.  They'll have it all boxed up and ready for pick up, usually in the afternoon.  Tell them you want some bones for your dog and you'll get a box of them too.

Now this place does a perfectly good job of processing your homegrown  pig, but it's so funky.  The funny thing is it's just in a residential area in old Pukalani - a lot of the town is still zoned AG - and you would never know it was there, just a couple of blocks away from Pukalani Terrace Center!  It's a word of mouth kind of place.  They only kill one day a week too.  With an appointment, you bring in your pig on Monday, and pick it up 2 days later in the boxes.  It's a Japanese family that does the work here, again a family business.  I had to laugh the last time I took in a very fat one...  Mr. Nakasone gave me a scolding and said "no let em get so fat next time!"  Haha... it took so long to eat the previous one, that we just kept feeding this one.  Those were some expensive pork chops!

I don't know what we would do without these family run businesses that help to keep agriculture alive on Maui.  Let me know if you're thinking of relocating to Maui and you want to do a little farming.  There's plenty of land for sale, and some nice small farms too.  What are you looking for?

So are you going skiing? I heard that there was snow on Maui this week. A place like DeCoite and Nakasone are great to have close by. There  is only one place in Houston like that, but I go out of town to some butchers in the country.

I think the snow is still there - they usually close the road that goes all the way up due to bad weather.

I raise cows in Mexico. (My brother-in-law takes care of them, but we go once or twice a year to help out.) I just scavenge from others here.

Georgina - there are too few family run businesses - the large companies have all but put them out of business - in some areas they are making a comeback as people want to know what they are putting into their body!

BJ - yeah I wonder will will happen when nobody wants to be a farmer anymore?  Does anyone say "I want to be a farmer when I grow up", except for kids alreay on farms?
