My Vegan adventure continues and I'm still taking it one day at a time....so far so good!
As I continue my quest for tasty & healthy meat free and dairy free diet choices, I have four new recipes to share with you.
Vegan Pancakes
I totally revised a pancake recipe I've enjoyed for many years...still delicious...but now they are much healthier!
These pancakes are dairy free, oil free and the best part is...you won't know the difference!
1 Tbsp ground flax or chia seeds
3 Tbsp water
1 C flour (I use organic, white whole wheat)
1/2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1 C unsweetened vanilla almond milk
1 tsp vanilla
2 Tbsp unsweetened applesauce
1 banana
blueberries or diced apple
Combine ground flax (or chia) and water. Set aside. Blend flour, sugar, baking powder, and salt. Set aside.
Blend milk, vanilla, applesauce and flax mixture. Add dry ingredients to wet ingredients. Use whisk and blend until moist...do not over mix.
Add diced or mashed banana and blueberries. (Sometimes I use banana and diced apple.)
I prefer my pancakes really thin...if you like them thicker, use a little less milk.

Don't overcook lentils or they will be mushy. I had enough filling to fill 5 peppers.
How to Blanch Peppers: Place peppers in boiling water for 3 minutes. Remove and place in ice water until cool.

This casserole is awesome! A very good dairy free substitute for traditional macaroni and cheese.
The delicious Alfredo-like sauce is made with raw cashews and brazil nuts....no fake cheese or tufu!
It reheats well...great leftovers!
I used diced sauteed onion, not powdered.
Also good with sauteed mushrooms added.
The recipe doesn't call for it, but I soaked the cashews in water overnight to make them softer.
