"Getting Healthy the right way!"

 

In an effort to live a better life I am always looking for foods that work for you and not against you.  We have so many choices when I comes to food and yet I have always leaned toward convenience rather then total heath.  I tried something new this month that I have never tried before...  it may seem odd that I haven't tried this before but I really just never had.  It's "Quinoa" and it's really good! 

I tried "Quinoa" at my daughters house and I quickly asked for the recipe...  and have since made it.  I want to share it with you...  if you have already tried "Quinoa" you might like it made this way...  and if you haven't tried it I highly recommend it. 

 "Zesty Quinoa Salad"

Prep time: 20 minutes    Cook time: 10 minutes     Ready in: 30 minutes    Servings:    6

"Quinoa and black beans are tossed in a refreshing lime-cilantro vinaigrette for a quick and protein-packed lunch or side dish."

Ingredients:

1 cup quinoa  ~  2 cups water  ~  1/4 cup extra-virgin olive oil  ~  2 limes, juiced  ~  2 teaspoons ground cumin  ~  1 teaspoons salt

1/2 teaspoon red pepper flakes, or more to taste  ~  1 1/2 cups halved cherry tomatoes

1 (15 ounce) can black beans, drained and rinsed  ~  5 green onions, finely chopped  ~  1/4 cup chopped fresh cilantro

salt and ground black pepper to taste

Directions:

  1. Bring quinoa and water to a boil in a saucepan.  Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed.  10 to 15 minutes.  Set aside to cool.
  2. Whisk olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together in a bowl.
  3. Combine quinoa, tomatoes, black beans, and green onions together in a bowl.  Pour dressing over quinoa mixture, toss to coat.  Stir in cilantro, season with salt and black pepper.  Serve immediately or chill in refrigerator.

 

Footnote:  This is a part of my eating healthier diet (Healthy Lifestyle).  More fiber...  no or very little Cholesterol, low-fat, and very little sugar.  Drinking plenty of water and walking three or four times per week.

Update:  Weight loss: 23 pounds

Thanks Mike!  It really is an amazing Salad... with the red pepper flakes, ground cumin and lime juice it turns out with a pretty zesty taste!

Good for you. I am trying too and am almost to my first goal. I still have 3 pounds to go before I reach my 1st goal. I make my goals in small reachable steps so I don't get discouraged! HA!
