It's been twenty two weeks since I started my vegan adventure!

 I'm still enjoying the vegan diet....I haven't missed meat and there's been no temptation at all.  I did have a small piece of fish recently, because it was caught on Zack's first fishing trip and he brought it home to us.

Here are some of the recent vegan recipes I've made and really enjoyed....

This was really good....it could actually be a dessert!

A nice change from oatmeal and traditional breakfast cereals.

 

More than 10 grams of fiber in just 1/2 Cup serving!

A healthy, refreshing mayo-free Summer salad!

This was a lot of work to prepare....but it's lemony flavor is so good, it's worth the effort!

Baked potato wedge fries covered in beans, tomatoes and avocado....what's not to love here?

You can use chopped or sliced tomato or whole cherry tomatoes.  I chopped fresh tomato and mixed with cilantro, red onion and olive oil.  (homemade salsa)  

This was really good served with tortilla chips on the side.

I'm not really a veggie burger fan.  That said, this one is pretty good.

Nice flavor and the leftovers make a good cold sandwich.

I love cilantro and used it instead of parsley.  You can use whatever seasoning you like.

These blondies are not only vegan....they are flourless, gluten free and about as close to healthy as you can get with a dessert!  Most importantly of all....they are really delicious.

Nobody would ever guess they are made with chickpeas!  

They taste like peanut butter cookies... but guilt free!

Sharon:  I guess I needed to shake things up a bit. It was getting so boring...all the same foods week after week.  It's been fun trying new things.  

Bruce:  Quinoa is kind of hard to describe.  It's actually classified as a seed, but it's more grain like.  It's very much like rice when cooked.  It's a great source of both protein and fiber.  I use it as a side dish or mixed with veggies, or in soup.  It's easy to prepare and the flavor is mild so you can control the flavor by the ingredients you add to it.  You really should give it a try.

Toni:  It doesn't have to be all or nothing you know.  You could just go meatless several days a week.  Let me know if you do try any of the recipes I've posted.

OK thanks, Sharon.  Would the good old local Walmart have it?  I added some kind of lentils or legumes  to a salmon casserole of eggplant, yellow squash, zucchini, mushrooms, and chopped spinach and it gave a lot of texture and flavor to the dish.  Sounds like I could use it with that!

Michael:  I'm starting to accumulate quite a collection of vegan recipes.  There have been some duds that will not be made again, but for the most part I've been happy.  I hope you will let me know if you make any of them.

Bruce:    Yes Walmart carries it.  Most supermarkets have it.  Trader Joe's has it too.  I don't think you will be disappointed....and it's so good for you!

Sharon- I have to admire your dedication.  I'm not a huge meat eater and love veggie burgers!  We've been eating a lot of Quinoa but haven't tried it as a breakfast cereal.

These recipes sound so delicious, really.  And you should be awfully proud of yourself-it's not easy and I am really trying to avoid gluten and that's hard enough! Is there a side benefit to this diet of weight loss-because that is what I need!

I dont miss anything, being vegan is good for me psychically, mentally and good for the animals too which is very important for me. Roger re blogged your recipes so I came over to check them out. I love Quinoa so the cereal sounds wonderful. They are all very good sounding. You show how easy it is be eat the vegan way.

Kathy:  Quinoa is so good, I have it for lunch and dinner often...let me know if you try the cereal.  

Joanna:  Thank you!  Yes, weight loss is usually part of the deal.  I was eating fairly healthy already so I didn't notice much of a difference.  My husband has lost weight though.

Beth:  I hope you do try them.  It really makes me happy when I hear someone has tried one of the recipes and likes it.

Patricia:  That's funny...I haven't had a Thanksgiving yet...not sure how I will handle it.  Most of the food I eat can be enjoyed by nonvegans too.  I'm not eating tofu and soy products.  I'm just eliminating meat and dairy.  Just because it's "vegan" doesn't mean meat eaters won't enjoy it.  Funny how people allow labels to influence them.

Connie:  Veggie burgers are the least favorite of the meals I've been eating.  They wouldn't be my idea of a snack, but I love that you keep them at the office!  A very healthy choice!

Debbie:  I hope you try them, and report back....I'm only posting recipes that I've tried and liked.  Let me know what you think!

Sharon, I am not a vegan but am liking meat less and less. The pasta dill salad looks like one worth trying.

Karen:  I'm not a 100% true vegan.  I still wear leather, I eat honey, I don't worry about the occasional egg or dairy in baked goods.  I'll eat shrimp if I'm having Chinese, and a lobster roll now and then.  I have not had so much as a bite of any meat for the last 6 months...but I will if the desire is ever there.  So far I have not been tempted at all.
