It's been 34 weeks since I started my Vegan adventure and it's going really well.  I've still not had any meat and have no desire to have any, but I have had some seafood a few times.  I'm very happy with my new healthier lifestyle!

With Fall just around the corner, I thought I would share some favorite vegan soup recipes.  I am a big soup fan and could eat it every day regardless of the season!

Creamy Mushroom Soup

Straight Up Food 

It's still possible to have delicious creamy soups after you remove dairy from your diet. This one is a great example.  It's not only very good as a basic mushroom soup, it's wonderful with leftover veggies (broccoli or squash for example) thrown in.

Revisions:

I double the amount of mushrooms and  I add 2 Tbsp of Tamari to the sliced mushrooms while they are cooking.

Creamy Corn and Potato Chowder

Corn chowder has always been a favorite of mine, but I gave it up years ago when I gave up dairy.  This chowder is fabulous....you will never know there is no dairy in the recipe. 

Revisions:

I used 1 TBSP of cornstarch instead of potato starch.  I increased the vegetable broth to 7 cups.  I used 1 cup unsweetened almond milk instead of vegetable broth at the end to blend with the cashews and cornstarch.

 

 

Here is a recipe I created with some inspiration from my cousin, Debby, who introduced me to the secret ingredient....Forbidden Rice.  The rice gives the stew a beef like flavor and color.  This stew is so delicious, even my dad, the beef eater, enjoyed it.


Forbidden Stew
  (Vegan beef stew)

1 lg Onion (chopped or sliced)

vegan beef stew2-4 cloves Garlic  (minced)

8 ounces Mushrooms  (sliced thick)

2 Portobello Mushroom caps  (cut in half, sliced thick)

3 Tbsp Tamari

1 - 2 Tbsp Herbs de Province

6 stalks Celery (sliced)

7 medium Carrots  (sliced)

12 small Red Potatoes (bite size pieces)

12 Cups  Vegetable Broth

1/2 C Forbidden Rice

4 Cups Broccoli  (bite size florets)

Salt and Pepper 

Two Handfuls of Baby Spinach 

 

Saute onion and garlic till soft.  Remove from pan.  In same pan saute mushrooms in olive oil, tamari, and herbs until tender.

Add onion and garlic to mushrooms. Add celery, carrots, potatoes, broth, and rice.

Bring to a boil.  Cook about 10 minutes.  Lower heat to simmer and add broccoli and seasonings.  Cook until veggies are tender. Add spinach.  Simmer a couple of minutes until spinach wilts.

 

Just so this post isn't only about soup....let's throw in another Fall comfort food....muffins!

I've tried several "healthy" blueberry muffin recipes and this one is by far the best I've had.  

I didn't add the stevia (or 2 additional Tbsp. of sugar) and found the 1/2 cup sugar is plenty sweet enough.

Love your vegan recipes Sharon and I am a real soup lover-I do a mushroom soup with Rice or Coconut milk and that seems to thicken it very well.  Thank you for sharing these wonderful recipes.

Sally & David:  I hope you give them a try....I don't think you will be disappointed.  If you try them and revise them in any way, let me know....maybe you will have a new twist I didn't think of.

Joanna:  I use coconut milk in a thai soup that is one of my favorites.  It's a very tasty way to make a creamy soup!

I went vegan and then loosend up, added seafood, as was told that it is good for heart. Now I would call it a flexitarian, as I occasionally can try chicken, but this is pretty much all my disgressions...

Never heard about forbidden rice either. Need to figure out what is tamari and Herbs de Provence... Will try the stew.

Funny, but I make the stakes, meats and stews for the rest of the family and, occasionally, guests.

Sharon, I am a soup lover too and like those packed with flavor. Mushroom soup is one of my favorites. I have bookmarked this. Also like the idea of using almond milk as a nice touch in your chowder. I will give that a try, too.

Jill:  I'm not 100%, but close.  Mostly vegan.

Beth:  You don't have to be a vegan to enjoy vegan recipes.  My parents have enjoyed every vegan dish I've made them and they are very mainstream eaters.

Jon:  You are doing better than most....that's a good thing!  I got Forbidden rice at a local health food store, but it is available online.  Herbs de Province is just a blend of herbs...it's available at most grocery stores.  Tamari is a form of soy sauce ( has a richer flavor.)....also available at most grocery stores. 

Debbie:  I hope you will let me know if and when you try the recipes, and I hope you enjoy them!

Sharon:  They are all very good.  I've made each of them numerous times and never get disappointed!

Thanks for the recipes. I'm a vegan wannabe but haven't made the full time commitment yet. I believe Tamari is also gluten free and soy sauce isn't.

Sharon, I'm sure your recipes are delicious but I need real food.  But there are lots of vegans out here and I'm sure it's healthy.  I have a nephew who brings his own tofu turkey to family Thanksgivings.  It thinks it's call Tofurkey.

You are the type of woman who can and will stick to a plan. You know what's good for you and when it comes to staging, you know what's good for others too. I find you to be very resourceful, family oriented, healthy, goal oriented, and one of the most honest women I know in New Hampshire.

Re Tamari:    It's a broad class of soy sauce that's made with no (or little) wheat and a greater concentration of soybeans.

Lloyd:  Ouch!  "real food" ???    I eat real food....real healthy food.  I don't do tofu.  Tofurkey sounds disgusting to me.  Thanksgiving will be interesting because  I think I've had my last turkey, now that I know what I know about poultry I just can't do it.  

Patricia:  I'm not sure I deserve such a glowing description....I'll take it though and I thank you!  Oh, exactly how many women do you know in NH????  LOL!

YUM. I am a vegetarian and will definitely try this recipe for the soup. Sounds perfect as soup is my favorite food.

Sharon, No meat for this gal either. I love soups as well. I have a crock pot I use in fall and winter months to create some wonderful vegan soups.
