It's been 34 weeks since I started my Vegan adventure and it's going really well. I've still not had any meat and have no desire to have any, but I have had some seafood a few times. I'm very happy with my new healthier lifestyle!
With Fall just around the corner, I thought I would share some favorite vegan soup recipes. I am a big soup fan and could eat it every day regardless of the season!
Straight Up Food
It's still possible to have delicious creamy soups after you remove dairy from your diet. This one is a great example. It's not only very good as a basic mushroom soup, it's wonderful with leftover veggies (broccoli or squash for example) thrown in.
Revisions:
I double the amount of mushrooms and I add 2 Tbsp of Tamari to the sliced mushrooms while they are cooking.
Creamy Corn and Potato Chowder

Corn chowder has always been a favorite of mine, but I gave it up years ago when I gave up dairy. This chowder is fabulous....you will never know there is no dairy in the recipe.
Revisions:
I used 1 TBSP of cornstarch instead of potato starch. I increased the vegetable broth to 7 cups. I used 1 cup unsweetened almond milk instead of vegetable broth at the end to blend with the cashews and cornstarch.
Here is a recipe I created with some inspiration from my cousin, Debby, who introduced me to the secret ingredient....Forbidden Rice. The rice gives the stew a beef like flavor and color. This stew is so delicious, even my dad, the beef eater, enjoyed it.
Forbidden Stew (Vegan beef stew)
1 lg Onion (chopped or sliced)
2-4 cloves Garlic (minced)
8 ounces Mushrooms (sliced thick)
2 Portobello Mushroom caps (cut in half, sliced thick)
3 Tbsp Tamari
1 - 2 Tbsp Herbs de Province
6 stalks Celery (sliced)
7 medium Carrots (sliced)
12 small Red Potatoes (bite size pieces)
12 Cups Vegetable Broth
1/2 C Forbidden Rice
4 Cups Broccoli (bite size florets)
Salt and Pepper
Two Handfuls of Baby Spinach
Saute onion and garlic till soft. Remove from pan. In same pan saute mushrooms in olive oil, tamari, and herbs until tender.
Add onion and garlic to mushrooms. Add celery, carrots, potatoes, broth, and rice.
Bring to a boil. Cook about 10 minutes. Lower heat to simmer and add broccoli and seasonings. Cook until veggies are tender. Add spinach. Simmer a couple of minutes until spinach wilts.
Just so this post isn't only about soup....let's throw in another Fall comfort food....muffins!

I've tried several "healthy" blueberry muffin recipes and this one is by far the best I've had.
I didn't add the stevia (or 2 additional Tbsp. of sugar) and found the 1/2 cup sugar is plenty sweet enough.
