Bacon-Wrapped Roasted Red Pepper Meatloaf

 

A tasty meatloaf with roasted red peppers and a sweet-spicy glaze... and of course, bacon!

 

INGREDIENTS:Bacon Wrapped Roasted Red Pepper Meat Loaf

Meat Loaf

1 lb. Ground Turkey, Beef, or Veal

1 lb. Ground pork or italian sausage

2 Eggs

1/2 Cup milk

2  Tablespoons Worchestershire sauce

2 Tablespoons Smoky BBQ or Steak Sauce ( I like TJ's)

2 Tablespoons Dijon mustard

2 Tablespoons Whole Grain Mustard

1 Tablespoon Siriachi sauce

2 Teaspoons ground pepper

1 Teaspoon salt

2 Teaspoons olive oil

2 Table spoons dried ThymeBacon Wrapped Roasted Red Pepper Meat Loaf

1 Medium Onion

4 Cloves garlic

1 Cup chopped roasted red peppers 

1 Cup Panko or toasted bread crumbs

1/3 Cup minced Italian parsley leaves

8 slices bacon, or what is needed to cover loaves

Glaze

1/2 Cup of ketchup

1/2 Cup of Sweet Chili Sauce

1/4 Cup of brown sugar

2 Tablespoons of apple cider vinegar

 For the glaze:  Mix all ingredients in a small saucepan and set aside.  

DIRECTIONS:

1. Heat the oven to 350 degrees. Sautee the onions in the olive oil until tender, add in a teaspoon of thyme, pinch of salt & pepper to taste. Add in the crushed garlic, be careful not to burn.  Set aside to cool.

2. Mix the eggs, milk, Worchestershire, mustards, remaining thyme, salt & pepper, Siriachi sauce, steak sauce.  Add in the meat mixture and blend with your hands.  Add in the onion-garlic mixture, roasted red peppers.  Add in the bread crumbs and minced parsley, blend until combined.

3.  Line baking sheet with foil, for clean up.  Place 2  10"X 6" pieces of parchment paper on top of the foil to ease the release of loaves.  

4.  Form into loaves on top of the parchment with wet hands.  Brush each loaf with glaze and then wrap each loaf with slices of bacon.  I cut the pieces of bacon in half so they fit perfectly over each loaf.

5.  Bake at 350 degrees until  the bacon has crisped and the internal temperature has reached 160 degrees. This should take about 1 hour.  Remove from oven and let rest for at least 20 minutes.  Heat the remaining glaze to simmer and serve over or on the side of sliced meatloaf.

I served this with crunchy pan-fried diced potatoes, onions & bell peppers and a Southern pea salad!
