need a recipe...

My sweet husband, David, has been telling me about this wonderful fish, Tilapia, that a friend of our's makes.  Well, after the forty-seventh time of hearing how we should make Tilapia, I purchased some, found a recipe, then served it for dinner last night.  Let me tell you, the reviews were not that great.

Now I am thinking it was the recipe and not the fish that needs to be tossed.  So, if you have an ever-so-delicious recipe for Tilapia please post....thanx!

Here are a couple that I make and love

 

Tangy Tilapia

1/2 C. Balsamic Vinegar
1/4 C. Olive Oil
1/4 C. Chopped Fresh Basil

Mix it all together to make a marinade.  Marinate fish for at least 1/2 an hour.  I find the longer, the tastier, but no more than 2 hours.

Broil the fish for about 5 minutes on each side, basting while you turn.  Enjoy!!

 

Cornmeal Crusted

Season cornmeal with 1 tsp cajun seasoning, and a pinch of salt, Coat fish and pan fry till done. Serve with Spicy Tartar Sauce -

Sour Cream
Horseradish
Dill

I usually use Equal parts of Sour Cream and Horseradish and about 1 tbs of fresh dill. - You can adjust for heat/preference.

Oh my gosh, I have to tell you about RecipeZaar.  I am addicted to this website.  http://www.recipezaar.com/  I was looking for a tilapia recipe last week, and I found this one: http://www.recipezaar.com/169764  I found it by searching on the ingredient tilapia, then I sorted by Rating.  I prefer to try recipes that have 4 - 5 stars.  This particular recipe was so good, I saved it to my cookbook. Oven Fried Tilapia

INGREDIENTS:

  • 1 to 1 1/2 pounds tilapia fillets
  • 2/3 cup flour
  • 3/4 cup plain bread crumbs
  • 1/4 cup cornmeal
  • 1/2 teaspoon Creole seasoning
  • 1/2 teaspoon salt
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon dried leaf thyme, crumbled
  • 2 large eggs
  • 2 tablespoons milk
  • 2 to 3 tablespoons melted butter, optional

PREPARATION:

Rinse tilapia fillets with cold water; pat dry.

Put flour in a shallow bowl or plate.

In another shallow bowl or pie plate, combine bread crumbs, cornmeal, seasonings, and herbs.

In another shallow bowl or pie plate, whisk eggs with cream or milk.

Dip fillets into the flour, then into the egg mixture, then dip in seasoned crumb mixture.

Place on a baking sheet sprayed with butter-flavored nonstick cooking spray. If desired drizzle each fillet with a little melted butter.

Bake at 400 degrees for 10 to 15 minutes, or until fish flakes easily with a fork.
Serves 4 to 6.
