AUTUMN HAS ARRIVED SO I'M PRACTICING FOR THANKSGIVING DINNER!

Before you think I'm getting carried away so early, preparing for Thanksgiving, please remember I'm Canadian and our harvest is far earlier and therefore, so is our Thanksgiving. 

Thanksgiving Day in Canada has been a holiday on the second Monday of October since as long as I can remember. It is a chance for people to give thanks for a good harvest and other fortunes in the past year. So this year it falls on Monday the 14th.

I always seem to host family and orphans at our home and I'm not a big fan of turkey so I attempt to sneak some different items on the menu!

This year I've already found two that I'm going to share with you.

1.  Corn Chowder with Wild Rice

2.  Wild Rice Buckwheat Pancakes with Smoked Trout Salad.

I think I'll need the most practice with the Pancakes so I'll share this one first:

For the trout salad you will need:

  • 3  tablespoon(s) mayonnaise
  • 3  tablespoon(s) full-fat plain yogurt
  • 1  tablespoon(s) extra-virgin olive oil
  • 1  teaspoon(s) fresh lemon juice
  • 1/4  teaspoon(s) freshly ground pepper
  • 1  cup(s) (about 6 ounces) flaked smoked trout
  • 2   scallions, minced (about 3 tablespoons)

For the buckwheat pancakes:

  • 1/2  cup(s) all-purpose flour
  • 2  tablespoon(s) buckwheat flour
  • 2  large eggs, plus 1 large egg yolk
  • 1  tablespoon(s) olive oil
  • 1 1/4 cup(s) whole milk
  • 1/2  teaspoon(s) salt
  • 1/4  teaspoon(s) freshly ground pepper
  • 1/2  cup(s) cooked wild rice
  • 4  tablespoon(s) butter

Directions

  1. To make smoked-trout salad: In a bowl, whisk together the first 5 ingredients until smooth. Gently fold in trout and scallions.
  2. To make the buckwheat wild-rice pancakes: In a large bowl, whisk together flours, eggs and yolk, and oil until smooth. Add milk, salt, and pepper, and whisk until batter is smooth and thick. Stir in cooked wild rice. In a small nonstick skillet over medium-high heat, melt 1/4 tablespoon butter.
  3. Add about 1 1/2 tablespoons batter to the pan; immediately tilt the pan to swirl the batter, making a very thin pancake about 4 inches in diameter. These are to be Crepe style!  Cook for about 30 seconds, then flip and cook for another 30 seconds.
  4. (If pancakes take longer than 1 minute to cook, increase heat.) Repeat with remaining butter and batter to make 15 more pancakes. To serve, fold each pancake into quarters; top with a dollop of trout salad. Garnish with chives.

    Have fun and get ready for your Thanksgiving with something a little different to start with.  I love the idea of starters before everyone hits the table when we'll begin with the Chowder.  I really enjoy using my big soup tureene too but never get to use it as much as I'd like with just the two of us but I always pull it out for the big holidays!
      Don't forget all that you have to be thankful for - it is never to early for that :)

Susan- I forget that you're in Canada!  Your  wild rice buckwheat pancakes make my mashed potato casserole sound kind of bland. YUM!

First let me say I can't believe you actually make pancakes from scratch, I never knew anyone in my life who made them from scratch.  Second if you keep putting these recipes on AR you might wind up with an awful lot of USA "orphans" on you door step on the 14th.

Liz -  LOL I don't think I've ever met someone who didn't make pancakes that way!!!   I hope the US "orphans" can recreate them and not have to cross the border :)
