I Used to Dislike Squash

I used to dislike, no, hate is a better description of what I thought of squash. But as I've matured and grown to appreciate the benefits of vegetables and fruits, I've grown to not just tolerate squash, but really enjoy eating it on a squash-a veggie I used to hateregular basis.

On my circuit run/walk course this morning I ran by the Vineyard Whole Foods Market and noticed the display of autumn veggies. Squash were prominent, although these are significantly larger than I've ever sampled.

Lots of pumpkins out too. The display indicated something called Pumpkin Palooza is being held at Whole Foods Market during the last days of the month. I suppose that is to celebrate all things pumpkin. I guess with Halloween and Thanksgiving right around the corner, that's to be expected.

Are there vegtables you disliked as a kid that you now enjoy?

Hello Wayne, It is amazing how our tastes change.  One vegetable I really disliked as a child was Beets.  I always had them pickled.  When I had my own garden we grew beets, steamed them, sliced them and added some butter and they were the best!  Thanks for sharing and bringing back memories!

How funny you write about squash as I used to turn my nose up at it every time.  Now, we have it several times a week - either grilled with other sliced summer vegetables or roasted, again with other summer vegetables (red/yellow/green peppers, onions, asparagus, mushrooms and different kinds of squash), spritzed with olive oil, sesame oil, salt, pepper, garlic salt and sesame seeds.  Absolutely delicious!  We cannot get enough of it!

Hi Wayne. Like you, I didn't care for squash as a kid either. I also didn't like beets, and turnips. But, today I do enjoy eating all these vegetables.

Susan-That is nice way to make those veggies more enjoyable. Maybe my wife is better at fixing veggies to be consumed than Mom was.

Jerry-I guess as we get older we get wiser.

Adrian-I've always liked spinach, although I never developed those killer forearms like you and Popeye.

Alan-That just goes to show you're a smart guy.

Jennifer-She prepares them a couple of ways I really like although I don't ask too many questions because I prefer just eating and not doing any of the cooking myself. One way is some sort of mashed arrangement, similar to mashed potatoes, and the second is a simple grilled deal with spices and salt.

Joe-It is healthy, so I guess that's one reason I embrace it now in my twilight years.

Sheila and Larry-I really surprised that I like it now. Not something I expected would happen.

Good question.. Probably most vegetable's as a child i did not like eating but especially cauliflower as I really enjoy eating it these days.

Wayne, that is a nice squash display.  I eat raw zucchini squash in thin slices all the time. I will be having some as a snack in five minutes actually :)  I really enjoy making both butternut squash and pumpkins soups.

Here is a nice recipe for you - cut an acorn squash in half and put it cut side down in a baking dish.  Add a quarter inch of water.  Cook for about 40 minutes.  Then remove from water and turn cut side up. Add a little butter, dash of nutmeg, maple syrup and some chopped walnuts and bake for five more miutes.  Heavenly!
