My moms 74th birthday was on October 2nd. All day I had wondered what I should cook for her birthday dinner. She was not giving me any input "It's just another day" --Not really. It's a special day in our house.
Mom and I grew up and lived in Karlsruhe, Germany which is only minutes away from France where our family (and friends) would go frequently for lunch or dinner when we were younger. Karlsruhe was at the crossroads between Swabia and Palatine, in the county of Baden. The French area west of Karlsruhe is called Alsace (Elsass) and has been a pawn in German-French relations for a long time, being torn back and forth once belonging to France then belonging to Germany. Since WWII it's belonged to France again.
My grandma loved snails and frog legs, which were really not so much my thing, other popular menu items were Tarte D'Onion, French Onion soup and Tarte Flambee (or Flammkuchen).
I decided that Flammkuchen, sort of a french pizza, would be what I'd want to try. To make thing seasy I wanted to use a dough without yeast. In France it is baked in a wood stove oven - I don't have one :-( so I used our regular oven.
You need for 4 thin Flammkuchen:
400 g | about 14 oz flour |
2 tsp | salt |
2TSP | oil |
220 ml | about 1 cup Water |
400 g | about 14 oz sourcream |
Salt und Pepper, | |
2 | Onions |
200 g | diced bacon or amount to taste................... minced garlic |
Traditional Flammkuchen has only sourcream, onions, bacon - but if you want to add some cheese.
Start by adding flour, salt, oil and water and mix it then knead it to a smooth dough. Then cover it with cellophane and let it rest in the fridge for about 30 mins.If the dough is too sticky add some flour or if it's not sticking together add some water.
While the dough rests in the fridge, mix sourcream, salt, pepper and minced fresh garlic - don't use garlic powder.
To save a few calories, I mix a little 2% greek yoghurt instead of all sourcream.
In France the bacon cubes were put on the Flammkuchen raw but I briefly threw them in the pan to let out some of the grease. Also, I chose red onions. I like their sweetness, but to be honest, that's what I had in the fridge that needed to be used up.
Pre-heat the oven to 375 F.
Set aside all toppings you have prepared and get the dough. I used my silicon baking sheets with a dusting of flour. Divide your dough into 4 pieces, pick up the first quarter and roll it out very, very thin.
Spread your sourcream mix, salt, pepper, bacon, onion, maybe cheese if desired. Bake it at 400F until the pizza looks cooked - probably 15 mins? sorry, I actually never set the timer....

Sliced apples or pears
chopped almonds
cinnamon
brown sugar (sprinkle)
lemonjuice (sprinkle)
Prep. Bake. Yum.
