Squashing the Myth on Squash

     What is all the hype every Fall surrounding those misshapen, bumpy and sometimes just downright ugly little vegetables we call squash?  Yes, they do come in pretty colors and they match our Fall décor so well.  But where did they come from and are they really good for anything other than sitting on our coffee table in a rustic bowl during the Fall months?  The truth is, that there is so much more to our fall friend the squash than most people think.  Squash has been around for thousands of years and recent studies puts it among the top three food sources for obtaining important antioxidants.  

     When we think of squash, it is usually the butternut, acorn or spaghetti varieties; however squash is divided into two main categories: Summer squash and Winter squash.  Summer squash includes zucchini and are harvested during the growing season and yield immature, smaller plants.  Winter squash, such as butternut and spaghetti squash as well as pumpkins, are harvested as mature plants and are usually larger with tougher skin, requiring longer to cook, but store well over a long period of time.  

     With all the nutrition hype over the past years, squash has gotten a makeover when it comes to preparation!  From soups to dinner rolls, you can find a squash recipe for just about any type of dinner you want to cook up.  Just remember, the healthiest way to cook squash is to steam it.  This is actually one of the quickest and easiest ways to prepare it, while keeping most of the beneficial nutrients.  And if you want to stay local when it comes to your squash, the Walnut Creek Local Farmers Market, located on Locust St, Giamona Dr and Lacassie Ave in Walnut Creek, CA 94596 is an excellent place to go! They not only offer locally grown fruits and vegetables, they also sell delicious honey, wine, cheese, olive oil, have all types of food vendors, handmade soaps, live music, balloon-making, face painting, and more!  The Market is only open on Sundays from 9am-2pm and parking can get a bit tricky.  So get up early on a Sunday morning, find a good parking spot, and don’t forget to pick up some of that wonderful and healthy silly little vegetable we call squash!

Squash is delicious and I had the best bowl of butternut squash soup.  This staple is a much in my kitchen each fall and winter.  For some reason, it tastes better this time of year.
