What I did with the leftovers.

We all have the problem. We entertain, make too much food and have leftovers.

I consider leftovers a challenge to be met like any other, and I love a challenge.

We are the entertainment committee at our condo, so some of the left overs end up in my fridge.

I want the “repurpose” of food to look and taste like it was the original purpose.

Here are some of the ways I repurposed items from the last several weeks.

The events were Christmas Dinner, New Years Eve Dinner and a welcome home dinner for some friends.

The Christmas Honey Baked Ham became grilled mini Ham and Cheddar sandwiches that had been brushed with Dijon Thyme butter before grilling. I served these new years Eve. The left over ham scraps were turned into ham salad.

The 3 Christmas turkey carcasses were stripped of meat and boiled down into stock, which a shared with a neighbor.

The rest of the Turkey meat was made into croquettes, a mixture of onions, turkey, 1 slice of bread, a bit of milk then frozen in individual servings.

The coarse potato dish that was abandoned was made into potato rice cakes.

The gravy was frozen in an ice cube tray and place in a bag for controlled access.

The left over corn on the cob was turned into corn fritters.

The left over baked potatoes were turned into potato salad.

The roast chicken was made into chicken salad served in avocado bowls and the balance was cat food.

The leg of lamb was lamb sandwiches and the rest was turned into Sheppard’s Pie using Alton Brown’s recipe.

The green beans ended up in a soup pot with some leftover rice and whatever meat I could scrounge.

I really don’t understand people who don’t like leftovers. They are missing out on a world of eating.

Hmmm.. you made me hungry just reading about your "repurpose".  I must say you are very creative.  Howeverm it is great the food was not wasted.
