Zucchini Information:
A medium zucchini has more potassium per bite than a banana and nearly half of the recommended daily dose of vitamin C.
Pick firm, smooth zucchini--the smaller the better. Larger squash can taste bitter.
Store zucchini in a plastic bag in the refrigerator to prevent them from losing water and becoming rubbery.
Chop half an inch off the stem and rounded ends of the beg before cooking.
Toss chopped, sliced or grated zucchini with salt to draw out water, then squeeze dry or blot with paper towels. Otherwise, they will release too much moisture while they cook.
