ORZO, FETA AND TOMATO SALAD - fresh herbs make this dish sing!

I don't know about you but in our house, cold salad side dishes are on the menu everyday.  Something off the grill and something out of the fridge - YUM!

I like to make something first thing in the morning and pop it into the fridge for lunch or dinner.

1 cup of uncooked orzo pasta
1/4 cup of pitted greenn olives, sliced, chopped or left whole
1 cup of diced or crumbled feta
3 TBSP of chopped FRESH parsley
3 TBSP of chopped FRESH dill
1 chopped tomato
1/4 cup olive oil, virgin preferably
2 TBSP lemon juice
S & P to taste

 

Bring a large pot of salted water to a boil. (should taste like the sea!)

Cook Orzo for 8 minutes, (al dente)

Drain and rinse in cold water to stop the cooking process

Transfer to a pretty bowl and mix in olives, feta, parsley, dill and tomato

In a mixing cup or bowl, whisk oil and lemon juice

Pout over pasta and mix well

Season with salt and pepper.

Chill til ready to devour!

Love it all but the dill.....wonder how it would be if I left it out GG.....I only like dill pickles but not the flavor with anything else.  Yes, I know, I'm weird!

Roger - it would work without the dill.  Just add extra parsley.  I've even had it with mint leaves - yum!

I love using Orzo pasta in dishes, because it is not something you see every day.  I make a Greek Orzo salad, that has many of the ingredients you list.  About the only difference is I use Kalamata olives, and add raisins.

Hi Myrl -  I love Orzo and fed my husband this for years before he finally realized it was a pasta!  He always claimed to hate cold pasta so I'd tell him it wasn't pasta, it was Orzo!!
