Easy Blueberry Muffins

I really enjoy cooking/baking. I thought I would share an easy blueberry muffin recipe.

 

2 Cups Bisquick

2/3 cup milk

1/3 cup sugar

1 egg

1 cup frozen blueberries

1 tsp vanilla  

 

Directions

 

1. Mix together Bisquick & sugar with fork.

2. Add wet ingredients (milk, egg, vanilla) and mix just until everything is wet. (over mixing will cause flat muffins)

3. Mix in blueberries.

4. Put cupcake papers in muffin pan and spray with non-stick spray.

5. Fill each muffin 3/4.

6. Bake in 400 F pre-heated oven for 12- 20 minutes. You will know they are done when you stick a toothpick in them and it comes out clean.

 

You can use fresh blueberries, however I preffer to use frozen because this keeps your batter whiter rather than using fresh the batter will turn blue from the blueberries.

I am  actually never going to make these,  but when I saw blueberry muffins in the title I had to check out the recipe  as  I do  love blueberry muffins.  Now  just need to  find someone else to make these  for  me.

I cannot find my muffin pans so I might have to wait a couple of days as I have to go buy a new pan. I will stop by and post my muffins. I love things made with Bisquick.
