I Did It Backwards….and It Was Better!

 

Yesterday, I ran out of Italian breadcrumbs, and I forgot to add them to my grocery list for today.

 

I remembered that I had some heels of whole wheat and English muffin toast bread in the freezer.

 

I took them out, cranked up the convection oven to 375 degrees and threw them in to cook.

 

Then, I checked Alton’s Brown’s recipe for making bread crumbs.

 

Oops. 

 

That recipe tells you to put all the ingredients….Italian seasoning, garlic powder, kosher salt and the bread in a food processor first and grind it and then lay it out to bake.

 

I beg to differ. 

 

Mine turned out much better by toasting/roasting the bread first. Then I added the seasonings and I finished it off in the coffee grinder.  The flavor is better because the seasonings weren’t  roasted and the texture is better, because it wasn’t smooched first before getting crisp.

 

 

Try it.  It’s cheaper, easier and much better tasting than the store bread crumbs which have preservatives in them, too.

When I need bread crumbs I just use the bread I have in the freezer and toast it.  Then I grind it up in a mini food processor.  So I think you made a great choice!

I do the same thing, Suzanne!  And, I agree that toasting first makes better crumbs.

They day our bread goes over to the it's not moldy yet, but it's not going to get eaten I pop it in the freezer for just such occassions and I do the same thing, cook, then season.

Thanks for the recipe. I always copy recipes to my word file "recipes", then print them out for my personal cookbook. But, I also like keeping the recipes on my computer just in case I lose the printed version.

Suzanne, just curious, but is "smooched" a technical cooking term? Funny, but when I saw your post title and before I read any of it my first thought was of something that I cooked for the first time and more or less did it backward as well.  I feel the same way about it...tastes much better.

I will try that the next time I need bread crumbs in a recipe. I have made homemade croutons and I flavored before I toasted and they were better than any I have had at any restaurant.

That is a great suggestion, I tried a new potato recipe last Thanksgiving and I was looking for bread crumbs and picked up Panko bread crumbs.  With white cheese it was great and everybody wants we to make it again this thanks giving.
