Chef Mark Stephen Schmidt says that “Blackbird and Henry is a place to hang out and unwind after work… and enjoy quality food.” Chef Schmidt has taught in the restaurant industry for over three decades, so he is well versed in what “quality food” really means. He features a mix of his most notable dishes along with new ones inspired by his British upbringing in Liverpool and his roots here in Texas. He was introduced to food when he would cook by his mother’s side growing up in England; and started loving it as he learned from personal experiences and the chefs he has worked with. He has worked in numerous restaurants in Texas, Santa Fe, New Mexico and Connecticut and has received 3 invitations to the James Beard House in NYC. Chef Schmidt has taught and cooked at various culinary events around the country and on a number of regional television cooking programs.
Here is a sampling of what you will find on his menu at Blackbird and Henry…on the appetizer menu: Smoked Trout Salad with young greens, fingerling, endive, mustard, French bean and duck egg. Another is Grilled Peaches with speck, rogue smokey blue cheese and toasted pecan oil.
On the dinner menu there is Cornmeal Crusted Redfish with andouille, oysters, new potatoes and pickled okra relish. Also Parisian Gnocchi with smoked mushrooms, swiss chard, feta and brown butter cream.
And, you know you can’t leave without dessert…Chocolate Ganache Tart with bittersweet chocolate, shortbread and coffee ice cream and a Seasonal Fruit Crumble with Mexican vanilla ice cream are 2 choices you’ll find on the menu. So, if you can stop by for brunch, lunch or dinner. And, if it’s not raining take some time to walk around town or maybe visit the campus of the University of Texas!
