Gorgeous.  Look at all those different egg plants.  I do live the white variety, my father-in-law used to grow it in his garden.

The farmer and his daughters created a beautiful fall display of vegetables. Fall is my favorite time of year for the colors, crisp air and comfort foods. Unfortunately our produce season is coming to an abrupt end.

Dianne Goode they are little eggplants.  And, they are very tasty, we love eggplants.

Myrl Jeffcoat love Moussaka, I have a wonderful recipe from Craig Clairborne, and it takes a half a day to make.  I usually make a big batch, and freeze for later meals.  It is so good.  

Patricia Kennedy if you saw the movie, the 100 foot journey, they filmed it at the Nice outdoor market, which in my opinion is one of the best and funnest markets in the world. Our Santa Barbara market has a constant stream of videographers who film it for their neck of the woods, we have some real creative folks here.

There's no question about it, Moussaka takes time, but is worth the effort.  I hadn't thought to freeze it.  That's a great idea!  Does the Bechamel sauce hold up pretty good if you do?

Do you freeze before baking, or bake and then freeze?  I know where I can get my hands on some wonderful eggplant.  I may fill my freezer this weekend. Also, rather than frying the breaded eggplant near the beginning of the process. I put the eggplant slices on cookie sheets and broil them instead.  I can process many more of them faster that way.

Oh how I love those colors together! The texture of the harvest is glorious and those baskets of aubergine, golds and red work beautifully together-of course the shiny white eggs help keep everything in balance.  Just like the color wheel!

Myrl Jeffcoat Like you I don't bread the eggplant, it becomes way too heavy tasting, I use either the oven or my panini press.  I do bake it firsst prior to freezing, and you are getting me motivated to make some.  Happy eggplant baking.  A

Wow - Using the panini press sounds like a wonderful idea.  Yep, tomorrow afternoon we are supposed to get rain.  I'm headed out tomorrow morning to do my shopping, and I'll spend the afternoon in the kitchen.  Now, to make room in the freezer. . .LOL

Hi Alexandra, These colors are just beautiful, especially when all put together. I was half visualizing putting all these together in an arrangement with some flowers in between. Beauty seems to have no boundry.
