My girl friend received this in an email - and we worked on the recipe to reduce the fat and calories

Original recipe -- replaced with
2 egss, well beaten --- use egg beaters
1 cup milk ---- use low fat or no fat milk
3/4 cup flour
1/4 tsp pepper
5 ounces ham, chopped ( about 1 cup)
1/2-3/4 cup munester cheese, shredded - use low fat cheese
1/2-3/4 cup cheddar cheese, shredded - use low fat or no fat cheese
1 tbs chopped onions
1/2 cup mushrooms or black olives- chopped ( mushrooms have less calories)
Our family loves green chiles or hot peppers - so that is what we use instead of mushrooms or olives - reduce the amount to 2 tablespoons of chopped hot peppers -halopenas - and mix with the eggs and cheese.
Directions
Preheat oven to 400°F.
Grease a 9-inch pie pan or cake pan.
In medium bowl, combine eggs, milk, flour, and pepper; beat until smooth.
Add all but final ingredient; stir. - if using chiles or hot peppers, stir these into the egg mixture
Pour into greased pan.
Top with olives or mushrooms if desired.
Bake for 30-35 minutes (until golden brown and slightly puffy).
