Bullhead Catfish Marinated in Barbecue Sauce

3 T. chopped onions

1 T. olive oil

1/4 cup packed brown sugar

1/4 cup ketchup

1/4 cup cider vinegar

2 T. Worcestershire sauce

1/2 tsp. dry mustard

1/4 tsp. salt

1/4 tsp. black pepper

1/8 tsp. dried oregano leaves

2 lbs. bullheads

Now in a small skillet, cook the onions in some olive oil over a medium heat until the onions are tender, stir in the brown sugar, ketchuo, vinegar, Worcestershire sauce, dry mustard, salt, pepper and the oregano. Stirring occasionally until the mixture is bubbly. Now reduce the heat, let simmer, keep stirring occasionally for 10 minutes.

Place the bullheads in a medium bowl and pour the marinade over them.

Now cover and refrigerate for 30 minutes, be sure to turn them at least once.

Grease a broiler pan. Now take the bullheads from the marinade and place them on the broiler pan.

Broil at 550 degrees for 8 minutes.

Baste with the marinade, turn them once.

Broil them 8 more minutes or until they flake easily.
