You can use any fish you may like for this one.

 

1 fresh catfish

2 slices of bacon

1 potato, sliced up

1 onion, sliced up

Any desired seasoning you may like

 

Start by cleaning the fish, lay it out on a piece of aluminum foil.

Place the slices of the bacon on the foil, you can put the fish on the bacon or the bacon on the fish.

Put the potato and onion slices on the fish.

Season to taste. Seal the fish in the foil, cook in the coals of your campfire for 20 minutes.

I love catfish, Dale and this recipe sounds really easy and good for you - as in not fried!!!  Though that is usually how I like my catfish prepared. I imagine the campfire, freshly caught fish, and the fresh air contribute to the taste immensely.

Dale - We've done this one but did put some "salsa" on top. Nice because it is all in one tin foil wrap.

I think catfish is my favorite, I love it all different ways.  I've never had it like this, but it sounds good.
