Fast and Simple Artichoke Heart Sauce for Pasta - YUM!

By
Real Estate Agent with Sotheby's International Realty Canada - Brokerage

With it being so damp and cold up here this week we decided to give the grill and rest and have some warm comfort food.

We don't have Pasta very often anymore but boy oh boy was this sauce tasty (and easy to prepare!)   We chose to have ours over Fettuccine and it went down a treat.

Let me know if you try it!

Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 large garlic cloves, chopped
  • 1 16-ounce can diced tomatoes
  • 2 teaspoons dried basil, crumbled
  • 2 teaspoons dried oregano, crumbled
  • 1 14 ounce jar of marinated artichoke hearts
  • 12 ounces Fettuccine, freshly cooked (I like fresh pasta but boxed will do too)
  • 1 1/2 cups grated Parmesan cheese
  • Fresh Basil to crumble on top

Preparation

Heat olive oil in heavy large saucepan over medium heat. Add onion and garlic and sauté until tender, about 5 minutes. Add tomatoes, basil and oregano and simmer until sauce thickens slightly, stirring occasionally, about 8 minutes. Add artichokes with marinade to sauce and cook 2 minutes. Add pasta and 1/2 cup Parmesan cheese to sauce. Toss until sauce coats pasta and mixture is heated through, about 2 minutes. Season pasta to taste with salt and pepper. Transfer pasta to large bowl. Serve, passing remaining 1 cup Parmesan separately.

That sounds really good.  And we don't eat much pasta in summer months, that sounds light enough to be a nice summer dish.

That sounds like a really good recipe, Susan.  I cook a similar dish, using the same fettucini, and sauce.  I haven't tried putting tomatoes in with it however.  I'll try that next time!

Bless her heart Susan, she never has made any attempt to bother people food in her life.  Abigail was gone back to the car to bring in a second load of groceries and she got into the bag and poof in a matter of a few minutes it was gone.   But she seems to be doing better today.  And rest assured, lessons were learned.

Actually, I had the artichoke hearts in my recipe, it was the tomatoes that were missing.

Everyone seems to like it!   Now that we're coming into good fresh tomato season, the canned version could be set aside and the fresh ones used.
