Nerdin Gardens is thriving this summer as August comes knocking at the door. We enjoy making refreshing dishes from garden to table, using cucumbers, like the Armenian variety for their crunchy texture, no peeling necessary, tomatoes, any variety will do, spicy jalapenos, bell peppers and more.
Cucumber Salsa
This dish is easy to make and takes a little over an hour.
Ingredients:
Chop:
- 2 medium cucumbers - peeled & seeded
- 2 medium tomatoes
- 1/2 cup green bell pepper
- 1 small onion
Mince:
- 1 jalapeno pepper, de-seeded
- 1 tablespoon fresh minced garlic
- 1 teaspoon minced fresh parsley
- 2 teaspoons minced fresh cilantro
Add:
- 2 tablespoons lime juice
- 1/2 teaspoon dill weed
- 1/2 teaspoon salt
- 1 (12 ounce) package tortilla chips
In a medium bowl, stir everything together. Cover and refrigerate for an hour and wallah! you now have a dish that is brimming with garden freshness . Serve with tortilla chips, over tacos, burritos or enchiladas.
