Marsala Chai is indeed a wonderful way to begin any day! Marsala Chai is a sweetened black tea with spices and milk that is served in India. Street vendors pour this wonderful drink from large kettles into cups. Indians love this national drink and consume great quantities of Marsala Chai.
In America it is known incorrectly as Chai. Chai simply means milk tea and this is much more than that with all of the flavors that swirl in your mouth as you take a sip.
To make Marsala Chai you will need the following:
4 green Cardamom pods, 2 whole Star Anis, 1 teaspoon black Peppercorns, Cinnamon in stick form, 6-8 whole cloves, fresh ginger, 3 cups of water, 1 cup of milk, honey or stevia. Personally, I prefer goat milk since I never use cow milk. Naturally, you will need black tea, loose or in tea bags.
I put all whole ingredients (except cinnamon) in an electric grinder and chop it up a bit before adding it (with the cinnamon) to the boiling water. Boil for 5 minutes and then add the milk and black tea and bring to a boil again. Turn off the heat and let steep for 3 minutes.
Use a sieve to strain out the ingredients while pouring the Marsala Chai into your cup. I always add the cinnamon stick since I will use the same cinnamon stick throughout the day in my tea (I later have many cups of herbal tea during the day and this same cinnamon stick goes a long way).
Marsala Chai is also a wonderful afternoon pick-me-up to get you back on track but I would not recommend it for the evening hours since you may have difficulty sleeping.
