My name is Susan Emo and I am a Shrimp-aholic!! I would eat shrimp twice a day every day and continue to be happy. I don't, but I could !
It is another glorious sunny but breezy day so we'll be dining alfresco again and what we're having tonight is what I like to call a Canadian Shrimp Gazpacho Cocktail.
Here at Emo's Eating Emporium, I like to serve it in extra large martini glasses or sometimes in my clear Irish Coffee cups. Lets get started . . .
2 pounds of cooked and shelled, tails off Shrimp (cook them yourself if you prefer to buy raw)
1 Lime
Celery Salt and Black Pepper for rim
1 cup of diced red onion (maybe 1 green onion cut on the diagonal for garnish)
1 stalk of celery, diced
1 English cucumber, diced
1/2 cup of corn, fresh, frozen or canned -whatever is on hand
1 clove of garlic, finely diced
1/2 cup of grated carrot
1 (or 2) avocado, diced & sprinkled with fresh lime juice
1 (or 2) jalapeno, diced
2 or 3 luscious freshly ripened on the vine tomatoes!! (chopped or diced)
a handful of cilantro, chopped
Motts Clamato Juice - (this is the Canadian part!!)
Mix all ingredients in a big bowl taking care not to smush the avocado or tomatoes too much! Add enough Clamato Juice to make it the consistency you desire. Chill until ready to serve.
Take your glasses and run a lime around the rim and then dip into a mix of Celery Salt and Black Pepper. Fill with mixture and save 1 shrimp to hang on rim.
