It's that time of year when Pumpkins are plentiful and it's getting cooler and FUN to eat your Favorite Fall Treats!
Here's a GREAT recipe for a FABULOUS "Pumpkin Roll" you and your family and friends are sure to ENJOY!
It's also a GREAT treat to serve at your Open Houses!
Pumpkin Roll
3 Eggs (beat for 5 minutes)
1 Cup Sugar
2/3 Cup Pumpkin
3/4 Cup Flour
1 Tsp. Vanilla Extract
1 Tsp. Baking Soda
Mix together above ingredients and pour into a "Jelly Roll Pan" and sprinkle witih chopped walnuts.
Bake at 375 degrees for 15-20 minutes
Remove from oven and turn onto lightly floured paper towels. Roll up until cool.
When cool, unroll and spread the following mixture ...
1 (8 ounce) package of Cream Cheese
1 Cup Confectioners Sugar
4 Tbsp. Butter
Roll ... Chill ... Slice & EAT!
