1 lb. of catfish fillets

1/2 tsp. of garlic pepper

1 egg white beaten

1 tsp. of grated lemon peel

1 tbsp. of lemon juice

1 cut of fresh breadcrumbs

1 tsp. of dried dill weed

1 tsp. of dried basil

1/2 tsp. of oregano leaves

 

Spray a baking pan or sheet with some nonstick cooking spray.

Rinse the fillets and pat them dry with a paper towel.

Sprinkle the fillets with the garlic pepper.

Blend the egg white, lemon peel and lemon juice in a shallow dish.

Blend the breadcrumbs, dill, basil and oregano and spread the mixture on a plate or some wax paper.

Dip the fillets in to the egg with one at a time to coat them.

Now Coat them with the breadcrumb mixture.

Place the fillets on to the baking pan. Spray the fillets lightly with some nonstick cooking spray.

Bake them at 400F for 10 to 15 minutes or until they are a light golden and the thickest part of the fillet flakes with a fork.

Season them with salt and pepper to your taste.

Ok Dale, do you eat anything else but fish??  This sounds good as well... I don't think I have ever seen so many fish recipes!!

Had a very long day.

Had a 91/2 hour's Inspection, 3 hour's to get there and 3 1/2 hour's to do it,

then 3 hour's to get back home.
