Delicious Nutritious Thanksgiving Leftover Recipe

  Thanksgiving leftovers usually include lots of leftovers...the season invites bouquets of cauliflower, asparagus, brussel sprouts and broccoli...green beans...though the mashed and sweet potato sides seem to disappear with gravy and sugary toppings.

    veggies Whether you have steamed or boiled them, they are just the fall apart consistency that works well to pop them into the blender or food processor....what you add next is a matter of taste....turkey broth if you have it..chicken broth if you don't .You may choose to use cream, (reduced fat or half and half if you wish) and let the flavors combine in this now liquified mixture.

   You may choose to add a hint of onion ...roast some red peppers...this is truly a "to taste" kind of recipe that changes with how much of what is leftover...be creative...let your palate be your guide.soup

What an excellent idea. We send the leftovers home with the guests and rarely have more than a little turkey and dressing left for one meal. Next time I will be more stingy. Ha!

Sally and David we have lots of leftovers from yesterdays Thanksgiving dinner, and I will be eating turkey for the next week.  Making Thanksgiving Soup would be a very tasty way of getting ride of some of it :)

I have a Vitamix and make creamed soups like this all the time.  My husband is making a regular turkey soup right now on the stove and the house smells wonderful!
