Yes!!!  A Strawberry Festival.  In Holland, Ohio (Springfield Township)!  This year, the Festival will be held June 11th - 15th.  It is the 71st annual one.

I must admit, I have lived in Holland for over 10 years and I have never attended one.  I think I am oing to change that this year.  I was looking at the website for the festival and I noticed that there is a bake off!  I love to bake!!

I was thinking of a strawberry pie, but I am sure that there are tons on those in the bake off.  Does anyone have any good recipes that are sure to win???

Strawberries, whipped cream, a little sugar.  Done. Maybe a little shortcake, but not at all required.  Unbeatable.

This recipe is a huge favorite of my family. 

Strawberry Pretzel Salad

First Layer:
2 cups crushed pretzels (I put the pretzels in a clean dish towel and crush with a rolling pin)
3/4 cup melted butter
1 tablesppon sugar

Mix, then pour into a 9" x 13" pan.  Bake at 400 deg. for 8 minutes.  Let cool.

Second Layer:
1 - 8 oz cream cheese, softened
1 small Cool Whip
1 cup sugar

Beat sugar into softened cream sheese.  Stir in Cool Whip and spread over baked pretzes.  Refrigerate.

Third Layer:
1 large strawberry jello
2 cups boiling water
2 - 10 oz packages frozen strawberries

Mix boiling water and jello, stir until dissolved.  Put frozen strawberries into dissolved jello.  Let stand for 10 minutes until mixture begins to thicken.  Pour over cream cheese mixture.  Refrigerate for several hours or overnight.

Oh my gosh, I live in the capital city (county) of Strawberries. We love making chocolate-cover strawberries. They are easy and yummy.

At your grocery store buy your favorite baking chocolate, melt over heat, and dip your strawberry in the warm chocolate. Let it cool over wax paper and then enjoy.

We go to our festival every year. They are a blast.

Mana - That sounds so good.  and I recently saw a recipe for Chocolate covered strawberries - The kicker was that they were filled with a cheesecake filling.  Yum!!!

 Almond Strawberry Salad

INGREDIENTS

  • 3 cups fresh baby spinach
  • 1/2 cup sliced fresh strawberries
  • 1/4 cup sliced honey-roasted almonds
  • 1 tablespoon cider vinegar
  • 1 tablespoon honey
  • 1 1/2 teaspoons sugar

DIRECTIONS

  1. In a large bowl, combine the spinach, strawberries and almonds. In a jar with a tight-fitting lid, combine the vinegar, honey and sugar; shake well. Drizzle over salad and toss to coat. Serve immediately.

Nutritional Analysis: 3/4 cup equals 74 calories, 4 g fat (trace saturated fat), 0 cholesterol, 98 mg sodium, 9 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 2 vegetable, 1/2 fat.

Chris - That salad sounds amazing!!!  And so simple.  I think my friend made something like it for a potluck, and she added red onions too!

Red onion would be great in it too!  It is simple, but people are always impressed!  Have a fun Strawberry Festival!
