Chicken Pie Casserole

By
Real Estate Agent with RE/MAX Town and Country

This is quick and easy.

1 1/2 cup chicken, cooked and cut up. (or if you are in a hurry, use 2 5oz Hormel can white chicken with broth).

2 eggs

1/2 cup cooked rice

1 1/2 slices onion (about 1/3)

1/2 tsp salt

1 1/2 cup broth

4 slices bread

1 can cream of mushroom soup

1/3 cup milk

Mix all together and bake in a 9x9x baking dish.

Brouth should be present around the edges of misture for plenty of moisture as it will be soaked up.

Bake at 350 for 60 minutes or at 375 for 45 minutes. It should have a nice crusted raised top.

Patty do I break up the bread in pieces or leave them whole? I just love recipes which contain ingredients on hand, easy and tasty. This one looks like it will win a place in my home.

Kim-I know you made this already huh.

Jacqueline-I leave mine whole but I don't see why you can't do it either way. Let me know how you like it.

I made this last night. Yes, it was easy to put together and had a great taste. My husband loved it. My daughter has packed up a serving for her lunch today. This is a winner.
