Pineapple Cookies

1/2 cup shortening (Crisco)

1 cup light brown sugar, packed

1 egg

1 tsp vanille

1 can (8oz) crushed pineapple, drained (save the juice)

2 cups flour

1 1/2 tsp. baking powder

1/4 tsp. soda

1/4 tsp. salt

 

GLAZE

3 cups powdered sugar

3 to 4 Tbsp. pineapple juice

Preheat oven to 400. Lightly spray cookie sheet with non-stick cooking spray.

Cream shortening and sugar until light

Beat in egg and vanille until light and fluffy. Add drained pineapple and mix well.

Stir in flour, baking powder, soda and salt. Mix well.

Drop by teaspoon on cookie sheet. Bake 8-100 minutes or until golden brown. Don't overcook.

Remove and cool for about 5 minutes before glazing.

Glaze- Combine powder sugar and pineapple juice in mixing bowl. Mix well and spread to top of cookies while they are still warm.

Until now i had never even heard of pineapple cookies! It sounds like a great recipe. I wonder how it would taste with fresh pineapple?

These sound good, does the juice make them too soft? I used to love baking cookies and freezing batches for gifts. Don't have much time for that lately
