Citrus Ginger Scallops, New Hampshire, Vermont Fishing

What ya need

3 tbsp. of fresh lemon juice

2 tbsp. of fresh orange juice

1 1/2 tsp. of grated gingerroot

1 1/2 tsp. of toasted sesame oil

3/4 cup of cornstarch

3/4 lb. of sea scallops, halved

1/4 cup of olive oil

 

Now in a small bowl, stir the juices, gingerroot, sesame oil ans 1 1/2 tsp. of the cornstarch together.

Coat the scallops with the remaining cornstarch, and shake off the excess.

Heat the olive oil to 375F in a heavy skillet. Fry the scallops in batches for 1 to 1 1/2 minutes per side or until they are golden.

Now put the scallops in to another skillet, and add the citrus sauce. Coat the scallops and cook them for 1 minute or until they are thickened.
