Many of the hosts and hostesses from Thankgiving will find that you have leftover...cauliflower, broccoli, green beans....vegetables of the tastiest kind....that tend to lose their "ooomph" when you microwave them one more time....So here is a tasty cure. We sometimes during a winter storm watch will re-created what we have come to call "Thanksgiving Soup" with a purchase of a variety of vegetables.
You take the blender or food processor and add ...turkey broth if you made some...chicken broth...you can buy some...we recommend the low sodium variety...cream or half and half or low fat cream....whatever most pleases your palate. We sometimes add roasted red peppers....celery for a variety of texture...do as you please. You may choose to add cooked potato chunks, carrot lumps....or pasta if you wish.
And Voila....it's the best and most unique soup you could ever have...with no real recipe....just your own taste to guide you thru the choices of ingredients that you choose to combine. It freezes well in zip lock bags or sealing bags and can be enjoyed again at a later date....or given with leftovers to someone in your neighborhood....a friend....a great way to share the spirit of the season.
