Once restaurateur Paul Fleming started eating fresh, pure food straight from the land when he moved to Napa, he knew that’s the only way to enjoy food. He considered it back-to-basics eating and wanted to offer that across the country. Fellow restaurateur Brian Bennett felt the same and started researching our diets and realized how many chemicals and hormones we put in our bodies. The philosophy of their restaurant became “Never-Settle-Sourcing™”. Their dishes are house made and hand crafted every day using all natural free range meats & poultry and peak of season produce. To quote them, they “believe in working with their hands, cooking with live fire and letting real flavors and quality sourcing speak for themselves”.
A sampling of what you’ll find on a Paul Martin’s American Grill menu: you could start out with Salt & Pepper Shrimp from the appetizer menu – wild Mexican Pacific shrimp, lightly fried with pesto aioli. Try a Kitchen Classic for an entrée: Braised Short Ribs with mashed potatoes, horseradish cream and beef jus…or Cedar Plank Steelhead – fresh salmon, shallots and bacon, organic spinach and crimini mushroom jus. From the grill there’s the Prime NY Steak with herb butter and pan roasted cauliflower. Feel like a burger? Try the Bistro Cheeseburger with fresh ground “never ever” angus, housemade pickles, black pepper aioli with Tillamook cheddar or Pt. Reyes blue. Whatever you order, you will enjoy knowing each dish was made from scratch using seasonal ingredients.
