Chicken in Dressing

Here is a good southern dish!

5 cups cornbread crumbs*

1/2 tsp salt

1 tsp.  ground sage

1/2 cup Vidalia onion

1/4 cup chopped celery

4 cups boneless chicken breasts, cooked and diced

3 cups chicken broth

2 eggs, slightly beaten

1 (10oz) can cream of chicken soup

Preheat oven to 375

In a large bowl,combine all ingredients, blending well.

In a 13x9 inch baking dish that has been sprayed with vegetable cooking spray, pour in mixture. Bake 40-50 minutes or until a knife that has been inserted comes out clean. Remove from oven and allow to stand for 10 minutes. Serve immediately. 

*Make cornbread according to cornmeal package directions. One 10 inch skillet or pan of cornbread should make at least 5 cups of cornbread crumbs.

Yummy...I will hold this for a cold day...looks like some good comfort food here...Maybe not the best for you but...good all the same!!
