Purple and white eggplants from my Haiku Maui garden
For a while at the end of summer my eggplants were going off! This year we even had some white ones that did well. They come in a lot of shapes and sizes and colors too. Here in Hawaii the long purple eggplant can be found in most markets.
I wouldn't say eggplant is my favorite vegetable to eat, but they are fun to grow and they look so beautiful when they are all shiny and plump.
Eggplants do well in the Haiku Maui climate, and will grow for a long time, making it worthwhile to have a few plants on hand all the time. In Japan it's considered good luck to have eggplant for the New Year... maybe it's just something that's easy to have growing in the winter months?
