With this cold weather we're having this week, I will definitely be cooking hot breakfasts this week! Today was bacon and eggs, but tomorrow I think we will have PANCAKES!

1 1/4 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 egg
1 T vegetable oil
1 to 1 1/4 cup of milk (depending on how thick you like your batter)
1 T sugar (optional)
1 tsp vanilla (optional)
Heat your skillet to about 350 degrees (I have had different skillets that work fine at 325...) and while waiting for pan to heat,
Mix dry ingredients together in a bowl, whisk in one egg. Finally add the vegetable oil and milk. Stir by hand or use a hand mixer to stir until smooth/ no lumps remain.
To test pan readiness, fling a drop of water on the pan. If the drop of water "dances"--you are ready to pour your batter! Pour four circles into the pan (or two large circles if you desire bigger pancakes). When the surface is covered with "bubbles", it is time to turn! Let brown on both sides, then remove with a spatula and butter while the pancake is hot. We like to eat with real maple syrup. Hope you enjoy!
