Gramma's Rhubarb Pie

Made this weekend and it was great. Thought I would share this recipe. The rhubarb is coming up here and it is a great time to make it. I have the green and the red rhubarb. I use half and half so it isn't too tart. This is also a custard pie recipe so it is not as tart.

 

Rhubabrb Pie Beatrice Emmett

3 eggs beaten

2 c sugar

2 2/3 T milk

4 t flour

3/4 t nutmeg

4 c rhubarb ( 1 inch peices )

 butter (cut in pieces )

Beat eggs, and stir in sugar. Add flour, nutmeg, milk, and rhubabrb.  Make your favorite pie shell recipe for a two layer pie. Put mixture in 9 in pie pan. Dot with butter and put a lattace top over the mixture. My aunt uses a full top on hers. Bake 50-60 minutes at 400 degrees.

This is great warm with vanilla ice cream!

Thank goodness the pie always turns out great since the cobbler did not turn out. Everyone had a great time anyway.

i don't believe that I have ever had rhubarb! And I am a vegetarian! I will have to seek it out and try out your recipe!

You are going to love this recipe. Some rhubarab recipes can be very tart, but this one has enough custard to make it sweet. The vanilla ice cream doesn't hurt either!

Leslie - My Mom and my Aunt came to visit last weekend and were able to take enough rhubarb for two pies. I checked the rhubarb yesterday, and it have grown enough for at least two more pies.
