I don't need a holiday to have watermelon. It's always in our house in the summer. Here are my two favorite recipes. Let me know how you're enjoying your watermelon this summer?
Watermelon Salad with Goat Cheese
- bitesized chunks of watermelon
- crumbled goat cheese (substitute feta or even fresh balls of mozzarella if you prefer)
- red onion - diced or thinly slided
- cubed cucumber
- cilantro, if you like
Dressing:
- 3 Tablespoons lime juice
- salt/pepper to taste
Best part of this salad - bright, juicy summer flavors
Second best part of this salad - zero Weight Watchers points except for the cheese
Watermelon Daiquiri
- enoughwatermelon cubes and ice cubes to fill a glass (I use about 50/50)
- splash of lime juice
- 2 oz (4 if it's the weekend) of rum
Blend and garnish with watermelon slices. Or strawberries. Or mint. Or not at all.
