Do you know the difference between Broth, Stock and Bone Broth? Well I know some people might say no and who cares? Others might say no please tell me😊!
I was inspired to share the answer to the question by one of our friend’s comments on one of my recent post.: What the real difference between Bone Broth and Stock and Broth is.
As most of you know, I have been cooking for a while now and I remember learning 40+ years ago, that broth was just plain broth. None called it bone broth, because it was not! In those days we made broth from meat and vegetables and simmered it in water. That is how my mother cooked soup.
The more flavorful way to cook soup in those days was, by making Stock. Stock was made by roasting the bones and vegetables and there might have even had some meat on it.
Over the years everything has been changing not just in the world, but in cooking terminology as well. What we considered stock three or four decades ago now many people call it broth. The confusion comes from the fact that many of the stores use the terms interchangeably i.e.: stock and broth. The current increase or should I say popularity of Bone Broth just added more confusion to this already confusing or should I say incorrectly interchanging of the terminology.
Now let’s look at how to make what sixty years ago what people called broth: basically, it consists of vegetables, aromatics and meat and you add water and depending how much time you have usually cooked it for about 45 minutes to a maximum of two hours. The easy way to tell the finished product remains liquid when you cooled it. Then the result is: you just made Broth!
Stock on the other hand you make by roasting bones in the oven and then this you simmer with the vegetables and aromatics generally for 4-6 hrs. then you strain and discard the solids and save the liquid. In turn good quality stock has a Jell like texture when it cools. Seldom did most people do this, because it took so much time and effort. Generally, this was just the foundation for rich sauces and or gravy. I admit it I would only do it for special occasions. (mostly to impress my guests)
So, then you might ask: What is Bone Broth? The best way to say: it is a combination of broth and stock. The bones are roasted but the real difference comes in that good bone broth is cooked for more than 24 hrs. That way all the nutrients, minerals and mostly collagen and all the good mineral are released into the broth. So, who has time to do this??? Very few of us hardworking Realtors have this time.
