I always plant way too many tomato plants, so all the tomatoes ripen at the same time, or so I think! What to do with all the tomatoes? I love salsa, and this recipe is really good.
HOMEMADE SALSA
2 large ripe tomatoes
1 peeled garlic clove
2 Anaheim green chili, seeded and cut into pieces, or one can of chiles
3 green onions, cut into small pieces
Jalapenos to taste (1/2 can makes it a bit spicy)
1/4 cup chopped fresh cilantro
1 tsp olive oil
1 T Lime juice
salt & pepper to taste
Char tomatoes on the grill, turning until peel blisters. Slip off peels and flesh should still be firm. Cut tomatoes in half vertically and remove green stem core.
Add all remaining ingredients including tomatoes, chiles, garlic, green onions, olive oil and lime juice. Process with brief pulses to reach the desired texture. You should leave visible bits of all the vegetables throughout the salsa.
Refrigerate until serving.
This usually makes quite a bit, but freezes well too.
