Backed Stuffed Lobster Recipe by Endre Barath, Jr.
First let me share that I have numerous cookbooks and one of my favorite cookbooks is by Jasper White a Boston Legend who happens to be a James Beard Award winner in the Cooking World. Over the years I would follow his guidance virtually word for word.
Clearly my confidence level has increased over the years, because the first thing Diane asked me did you use Jasper Whites’ Book “Lobster at Home”? I had to confess, that I did not. So immediately I pulled out the book and I was amazed how close my Recipe was to his. Clearly a good sign that dinner would be fine.
So, with that said, since I made Boiled Lobster the night before I still had plenty of clarified butter infused with Thyme and Parsley. Hence this was a 15-minute time saver.
I had about 10 tablespoon of unsalted butter (clarified) left over
One celery chopped , half an onion, couple of chopped carrots, a handful of mushrooms couple of Lacinato Kale chopped, and a cup of fresh or frozen corn all sautéed in a pan with the butter.
Once you sautéed the above place it in a mixing bowl and add one cup of Panko Bread Crum’s, if you prefer to use Italian Flavored Bread Crum’s that would be fine as well. I just prefer it to be less seasoned, so I can control the seasoning. I like mixing it with freshly chopped thyme others might prefer tarragon leaves coarsely chopped.( Depends on your taste)
I like to add about a cup of freshly grated Parmesan Cheese to the mixture. Sometimes I like adding chopped shrimp or chopped scallops. (This time I did not add it) Mix all the ingredients with a spatula or by hand together. Of course the butter needs to be melted and mixed in as well.
1. Preheat Oven to 400-425 F
2. I love 2.5lbs female Maine Lobsters for this meal. I find smaller lobster tend to overcook and larger ones cook unevenly and are not as sweet, I might call the meat a bit tough to eat.
3. Plunge a sharp knife straight down by the eyes of the lobster to cut the spinal cord and kill the lobster fast and humanely. I like to rub the neck of the lobster until she relaxes before it, sort of making it fall asleep. Others prefer putting it in the freezer for ten minutes.
3. With a Cleaver, or chef’s knife or cooking scissors split the lobster in half lengthwise. Remove and discard the head sac and intestine.
4. Remove to the tomalley and the roe and place it with the mixing bowl with the stuffing.
5. Crack the claws. Then add the stuffing to both halves and make the lobster look whole againlike a butterfly. Add all the stuffing in the middle but do not pack it hard, because then the meat will have a longer time to cook. Add some parmesan cheese on top off it as well
6. Bake the lobster for 30-45 minutes depending how firm you want the meat to be. Diane prefers a bit well cooked, so I bake it for 45 minutes until the stiffing and the cheese look crisp and golden. Some chefs like to brush the shells from the outside with butter to give it a nice shiny color I did not do it, since I was in a rush. All you need is some lemon wedges to serve and if you want add some lemon juice to the stuffing for extra moisture and flavor as well.
I just serve it in the Lobster’s Shell and have you enjoy the meal. If you want vegetables as a side dish feel free to add corn or green beans and rice on the side. Diane did not want any of that just the Baked Stuffed Lobster, hence I did not make it.
