December 18 is bake cookies day.
I read about it in the Carrier Pigeon last year .
It is a free magazine that I receive each month.
I have not baked cookies as yet. I hope to bake some this week but can’t do it today.

Not eating sweets at all these days - other than a square or two of dark chocolate. However, if I was going to bake today, it would be chocolate chip cookies.

Hi Gita- this is the first holiday that I've not done any baking. However, I'm slated to make a Gingerbread house with my great niece!!!

HOLIDAY CRANBERRY COOKIE
1) 3/4 Cup Certified Organic Extra Virgin Coconut Oil
2) 1 Cup Organic Sugar
3) 1 Egg
4) 1/4 Cup Orange Juice
5) 1 Tablespoon grated orange zest
6) 2.5 Cups Gluten Free Rolled Oats
7) 1/2 Cup Organic Walnuts, Halves & Pieces
8) 1/4 Teaspoon Ground Cloves
9) 1 Cup Whole Wheat Pastry Flour Organic Preferred
10) 1 Cup Organic Dried Cranberries
Cream together softened (melted) coconut oil and sugar. Mix in egg, orange juice and orange zest. Once well incorporated, slowly mix in oats, ground cloves and flour. Gently fold in cranberries and walnuts.
Make small balls of cookie dough, flatten them, and then place on greased cookie sheet. Bake cookies at 350 degrees for 12-15 minutes.
Makes 48 servings. Serving size 1.0 cookie.
