If you are tired of pecan pie, you may want to try this recipe for Japanese Fruit Pie.
My friend gave me this recipe and we just love it.  It is so easy to make.  I will be making some for Christmas dinner this year.  Thanks to Roy Kelley as he reminded me of this recipe from a 2012 post.

 

Japanese Fruit Pie

Japanese Fruit Pie


2 beaten eggs

1 cup of sugar

1 tsp. white vinegar
1 tsp. vanilla
½  cup shredded coconut
½  cup white raisins
½  cup chopped pecans

1 stick of butter, melted (add this last)
1 unbaked pie shell (Dab bottom of pie shell with a little milk or a little egg white to prevent it from being soggy.)

 



Mix all ingredients well, adding the butter last.  Pour into pie shell and bake @ 325 degrees for 45-50 minutes.

Enjoy this delicious and easy to make Japanese Fruit pie!
