More Saturday Smiles: Three Photo Views of Lion's Mane Mushrooms

By

Our exotic mushroom purveyor at the Santa Barbara Farmers Market introduced us to a new mushroom variety, Lion's Mane, (pictured above looking into one of the bags.  It was soft to the touch and beautiful to look at.

Hericium erinaceus is an edible and medicinal mushroom belonging to the tooth fungus group. Native to North America, Europe and Asia it can be identified by its long spines, its appearance on hardwoods and its tendency to grow a single clump of dangling spines. Wikipedi

According to veriwell mind, the health benefits are great and medically reviewed by a board certified physician. This mushroom is used in TCM (Traditional Chinese Medicine). Reading the benefits made me wish I bought a couple of bags...there is always next week.

A friend we see regularly at the market, who loves to eat and cook was buying two bags.  I asked him how he would cook them.  He cuts them up and sautées them in butter, sea salt, and a bit of minced garlic.  Here is a recipe with olive oil that also sounds delicious.

Wishing you all an abundance of Saturday Smiles...

I've never heard of these either - they are sure interesting. You'll have to let us know how you like them. We are having califlower crust pizza tonight and I'm already start to get hungry for it. :)

Morning again Alexandra.

While I've heard of those before, this is the first time I've actually seen them.  I can assure you I've never seen them in any of our markets before.

Those are really fascinating looking mushrooms, Alexandra.  At first glance they remind me of some kind of exotic coral!
